Koji Trays / Kojiban
Our Koji trays are built with yellow cedar and follow traditional sizes, offering as much surface area exposure to the air as possible. They are available individually or in starter kits. We also build koji trays to custom fit bread proofers. Custom sizes are also available.
Muro Cabinet
Our cedar cabinet is the perfect incubation chamber for small scale production. Available in 2 or 4 tray models, they help maintain the perfect environment for koji. They come equipped with a small heater, humidifier, and Inkbird regulator allowing even the novice to produce consistent results.
Kioke
The Kioke is the superstar of the Koji Shop! These hand coopered wooden vessels allow you to age your ferments perfectly using traditional methods. Available in ½ gallon, 2 gallon, and 4 gallon sizes, they are perfect for anything from shoyu to kombucha. Custom sizes are also available.
